Why does honey crystallize? – this is why honey hardens

Have you noticed that your honey has become hard or grainy? This is completely normal.

Honey crystallizing is a natural process – and actually a sign that the honey is genuine.


What is crystallization?

Crystallization means that the honey changes from a liquid to a solid state. This is because the sugars in the honey change over time.

All types of honey will crystallize sooner or later.


Why does it happen?

Crystallization is affected by several factors:

– Which flowers the bees have collected nectar from
– Temperature
– How the honey has been handled

Some types of honey crystallize faster than others.


Is crystallized honey bad?

No – quite the opposite.

Crystallized honey is often a sign that the honey is natural and not heavily processed. It still contains the same taste and nutrients.


How to make honey liquid again

If you want to restore the liquid consistency, you can do this:

  1. Place the jar in a water bath
  2. Use lukewarm water (not too hot)
  3. Leave it until the honey softens

Avoid high heat as it can affect the quality of the honey.
